Pour Cost Goals

Beer, wine, and cocktails don't run the same numbers. Set a goal for each and every product gets judged fairly.

One bar-wide goal makes your draft list look like a problem and your cocktails look fine, even when both are doing their job. PourCost gives each category its own goal.

The goals

  • Cocktail. Used for cocktails, spirits, and everything else that isn't beer or wine.
  • Beer. Used for every beer in your Bar Inventory.
  • Wine (glass). Used for wine poured by the glass.
  • Wine (bottle). Used for wine sold by the bottle. Bottle service usually runs a higher pour cost than by the glass.

What the goal drives

The goal is the line the pour cost meter measures against. It's also what the suggested Menu Price is built from: PourCost works out the price that lands that drink right on its goal.

Setting your goals

  1. Open Settings → Calculations.
  2. Tap Pour Cost Targets.
  3. Slide each goal to where your program runs. Changes save as you go.

Where to start

Spirit-forward cocktail programs often run 16 to 20%. Beer and wine typically run higher, around 25 to 30%. Your concept, your neighborhood, and your prices all move those numbers, so treat them as a starting point.

Tip

Goals change every meter and every suggested price in the app the moment you move them. Set them once, check a few drinks you know well, and adjust if the reads don't match your gut.
